What You Need To Make The Best Old Fashioned Chocolate Chip Cookie
- All-Purpose Flour — I’m seeing a lot of recipes that are using bread flour in chocolate chip cookies, but I think all-purpose flour is the way to go. It makes a thinner, chewy cookie with a better texture.
- Sugar — You want to use equal parts brown sugar and white sugar.
- Large Eggs — Two whole eggs.
- Unsalted Butter — It’s all about the butter. Some recipes call for shortening or margarine, but I don’t think a chocolate chip cookie should be made with anything but butter. Make sure it is room temperature.
- Chocolate Chips — Here, I like to use a combination of semi-sweet and milk chocolate chips. Use up to 2 cups total, depending on whether you like lots of chocolate chips in your cookies.
- Pure Vanilla Extract
- Baking Soda
Step-By-Step How-To For Chocolate Chip Cookies
- Step 1: Combine the dry ingredients in a large bowl: flour, baking soda, and salt. Whisk to combine.
- Step 2: In the bowl of a stand mixer (or a hand mixer), cream butter and sugar.
- Step 3: Add the other wet ingredients, the eggs one at a time, and the vanilla
- Step 4: Gradually add the flour and stir to combine. Don’t over-mix.
- Step 5: Stir in the chocolate chips.
- Step 6: Using a cookie scoop or a tablespoon, place scoops of the chocolate chip cookie dough on an ungreased cookie sheet.
- Step 7: Bake at 375° for approximately 9-11 minutes (baking time will vary). The cookies will start to turn a golden brown. When you remove them from the oven, keep the cookies on the baking sheet for a couple of minutes to let the bottoms firm up. This will also produce crispy edges. Then, remove to a wire rack and allow to cool to room temperature.
Tips For Success
- Tip 1— Make sure your cookie sheets are cool before starting your second batch.
- Tip 2 — Don’t over-soften your butter; if it is too soft or nearly melted, you will get a different texture to the cookie. You don’t want to use melted butter.
- Tip 3 — For a more chocolatey cookie, use chocolate chunks rather than chocolate chips.
- Tip 4 — For the best results, don’t line your cookie sheet with parchment paper; you want to bake on an ungreased cookie sheet; it produces a crisper edge and impacts how the cookies spread.
- Tip 5 — Store in an airtight container, that is, if you have any leftovers!
